I like to use Japanese eggplant--I think I'm partial to it because that's the kind my grandmother used to grow in her backyard vegetable garden--but I've used Chinese and the basic Italian type too. I did question the...Thanks for posting this recipe. I did question the cooking of the eggplant, because as written it looks like it gets less than a minute of cooking time. I'm sure it would be practically raw. So, I looked at the recipe on tastebook.com and saw that you missed an instruction that goes right after cooking the pork: "Add 1 tablespoon oil to now-empty skillet; add eggplant and cook, stirring every 30 seconds, until browned and no longer spongy, about 5 minutes; transfer to bowl with pork."
